Favourite slice at the moment...Choc Caramel...What else!!

My kids cant get enough of it, I eat too much of it, it never lasts long enough!!! AND it works everytime.

Chocolate Caramel Slice

BASE
1 cup plain flour
1/2 cup brown sugar
1/2 coocnut
125g melted butter

FILLING
1 tin condensed milk
2 tblspns golden syrup
50g butter

TOPPING
200g good quality chocolate
1/4 cup cream 

Preheat oven-180 deg, and prepare your tin.... I use the same tins for the every slice I make

1- Combine dry ingredients for the base, add melted butter, stir, press into tin and bake for 12 mins.
meanwhile.......prepare the filling
2- Combine all filling ingredients into large a microwave safe dish- I use 2 lt pyrex. Microwave uncovered for 3-4 mins, checking and stiring every min or so. It will slightly thicken and turn golden.
3- Pour caramel fill over warm base..... and bake in oven for another 12 mins
4- Cool for an hour..... sew, do dishes, hang washing, play, whatever....
5- Choc topping, use same microwave dish..... Combine chocolate and cream and microwave uncovered 1 min at a time stirring with a metal spoon until smooth.  Then spread over the cool caramel.  You could wait till it sets before cutting, sometimes we do sometimes we dont....  Delish.

Surprise!!!

Surprise Aunty Jodie!!! Last Saturday we ventured down to Melbourne for 4 days as a surprise for my travelling sister and her gorgeous family, they had travelled all the way from WA on the spare of the moment and as a treat organised by her awesome husband Chris.  Little did Jodie know that we had decided to tag along, boy was she surprised!!!

We organised the farm animals and packed up the kids (all 4 of them) filled the car to the brim and headed to Melbourne! It took 8 hours of driving which wasnt bad, the kids were so excited about seeing their cousins that they could hardly contain themselves.  Our Weekend was full of fun, excitment, curiosity and best of all, FAMILY!!

While being in Melbourne I couldnt not go to a Lavender Farm so off to Serendipity we trecked, I wanted to do more research about planting and products and to see the shop set up, as eventually we are going to open our farm to the public.  I also wanted to check out the Markets to gather idea's for set up etc. Aunty Jodie has some really cool shots of our adventures so when she emails them to me I will upload them.  The kids really were fascinated with all the activity that Melbourne holds! Trams, Bus's, Trucks, Cars, Horse Carts, Shops, Footy..... WOW you cant half tell that we are from the country! Brush the gum leaves off kids we are in the city!

I gave Tia my camera to take a few pic's. I love seeing what she see's. This is my Favourite photo that she took, I wouldn't have thought of taking it- So clever!

This was our view at night from the apartment we stayed in, very beautiful, overlooking the Yarra River! We spoilt ourselves- the 3 bedroom apartment had 3 bathrooms and was bigger than our house!!!- Desparetly seeking house extentions and reno's!!!!


It is Official "WE LOVE MELBOURNE!!! WE WILL BE BACK!"

Can't believe its August already!

I cant believe its August already, which means its been like a month or more since I wrote my first post! Well School holidays are well and truely over now, they were so great. During the school hols we had a dam dug, it was pretty exciting and great timing, the kids got to see all the action because they were home, And- ever since the dam was finish it hasnt stopped raining, now the dam is choc ablock full, excellent! We also went to  Peak Hill over the hols to catch up with Grandma, Poppy and family that was fun, kids had a great time. We cooked and cooked, over 200 sausage rolls, lots of muffins, cakes and slices and put them in the freezer, hoping that it would help making lunches on school mornings not such mad chaos! sadly there isnt much left already!
I have a shop on ebay that has been doing really well so in between everything else I have been sewing and creating templates. I have also had more orders from local stores, which is exciting.  At the moment I am working on my doorstops and thinking about house reno's! We have the builder coming around this week to get to ball rolling I will try and upload some photo's tonight when kids are sound asleep. I will also try and link my shop to my blog. I nearly forgot it is so cold here at the moment.... The kids went to school on the bus yesterday and it was snowing! snowing on the way there and while they were at school, not huge amounts but enough to roll  into balls and throw and to make a snowman! Makes winter magic!
